Once seasoned, (just follow the included instructions) it performs like a non stick pan without the added chemicals, browns beautifully even better than my All Clad tri ply pan, and holds the heat like a cast iron pan but without the heavy weight.

Whether your goal is to fry a quick egg, sear protein for dinner or make an elegant brunch, this pan is adept at all of the above. What’s more, the pan is currently getting an upgrade to improve upon its design and make it even more durable. I then scrubbed off the thin anti-rust wax layer using running hot tap water and detergent until it didn't feel waxy/sticky inside AND outside - and the handle too.The Matfer Bourgeat carbon steel pans are heavy pans, but not nearly as heavy as a cast iron skillet of the same size. Personally, I feel that the great design more than compensates for the increased square inches in total pan size. Upon receiving the Matfer Bourgeat pan, I started by seasoning it according to the brand’s specific directions, taking note of the ease of the process. The only thing you have to be mindful of when cooking with carbon steel over induction heat is that the pans—any brand, not just this one—can warp when heated too quickly. Now they are nice and smoooooth though and a pleasure to use with metal utensils, but I will probably oil them a bit more often after use now.

To finish up, I tested the pan as a pure baking vessel by making cornbread, then pushed the pan’s nonstick surface even further by making French rolled omelets and crêpes. They have all the benefits of cast iron —they’re cheap, can be used on any heat source, are great at searing, perfectly nonstick when properly seasoned — except they don’t retain heat quite as well. As part of our testing process, we routinely revisit past product recommendations to ensure they’re still accurate and to see how they compare to similar products. Then I have a thicker and larger Kinghoff 6 mm, 23,5cm, this one enables me to use my 28 cm Skeppshult frypan with the pancakes.Now on the large burner, the coldest area for pans of this size is in the middle of the pan, inside the inner “donut”. If you use an induction stove, carbon steel cookware—the Matfer Bourgeat pan included—is an excellent choice.
