Since the Farsi language uses a different alphabet (Arabic letters), there are many ways to spell the word for this crispy (slightly burned) rice in English. So when they say it holds up to 25 cups it means that’s the maximum amount that you can put in there. I have also successfully made tadig with potato, I just keep hitting the cook switch until it’s done. Keep the rice on after the timer has hit 60 minutes and you'll get extra-crispy tahdig; keep it on for 45 minutes or less and you'll just get a standard pot of basmati rice.
